That’s a big supposition for you to make Felipe, one might assume our practices differ in some, if not many, areas. Please also recall that water is added to the fermentation which adds to the weight. Our process thus far yields the numbers I’ve quoted.

Further more, this is is a perfect example of why collaboration is necessary. We have much to share if you’d like to come over. I’m sure you have something to share with us as well — we’re here to learn too.

I hope you find our unique utilization of the wastes compelling enough to also consider how you too might contribute to making mezcal production more sustainable.
